The Problem Isn’t Your Camera

I photograph my meals before I eat them. Not for Instagram, not for fun. It’s a compulsion at this point, an occupational hazard of spending years making products look better than they have any right to. So when a friend asked me to look at the food photos for her catering business website, I knew within three seconds what was wrong.

Every shot was taken directly overhead with the flash on. The food looked pale, shadowless, and weirdly flat, like someone had photocopied a plate of pasta. She’d spent money on a nice camera and was still getting results that looked worse than a decent phone in good light. The camera was not the problem. The lighting geometry was.

This is the thing nobody explains to small business owners shooting their own food: light direction does more for your image than any gear upgrade you’ll ever buy.

What “Flat Light” Actually Means and Why It Kills Appetite Appeal

When light hits a subject from the same angle as your camera lens, it eliminates shadows. No shadows means no depth. No depth means your beautiful risotto looks like a beige circle.

Our eyes are wired to read three-dimensional objects through shadow and highlight contrast. When that information is missing, the brain can’t reconstruct the texture of a dish. Crispy chicken skin needs a shadow to look crispy. A glossy sauce needs a specular highlight to read as glossy. Without those cues, everything looks the same, and nothing looks appetizing.

This is why front-facing flash is the enemy of food photography. It points directly at the subject from the camera position, and it kills every shadow in the frame. The fix is not a better flash. It’s repositioning your light source to somewhere between 45 and 90 degrees from your shooting axis, so the light rakes across the surface of the food and creates the micro-shadows that communicate texture.

The Two-Light Setup I Use for 80% of My Food Shoots

I keep a lightbox in my kitchen for testing setups, which sounds obsessive until you realize that testing a new arrangement takes four minutes and saves an entire reshoot. For food specifically, I’ve landed on a configuration that works across almost every dish type.

Primary light: a 24-inch by 24-inch softbox positioned at roughly 45 degrees to the left of the food, at table height or slightly above. This is your key light. For a basic strobe setup, I’m usually shooting at f/8, ISO 100, and 1/125 second, with the strobe at around 1/4 power. If you’re using continuous LED panels instead, the equivalent is getting your panel close enough that you can see clear directional shadows falling away from the food at roughly a 2-to-1 ratio against a gray card.

Fill light: a foam core bounce card, white side facing the food, placed to the right at about 18 inches from the plate. Not a second strobe. Just foam core. A 20-by-30-inch sheet costs under $3 at any craft store, and it lifts your shadow detail without flattening the texture you just worked to create. If the shadows still feel too dark for a lighter, airier dish, move the card closer. If you want more drama for a rich, moody shot, move it further away or angle it slightly back.

Background and surface matter more in food photography than almost any other product category. I shoot on a $12 textured vinyl mat from Amazon for most client work. It reads as weathered wood, poured concrete, or marble depending on your color grade, and it doesn’t absorb light the way real wood does.

Angle and Composition Are Not Decorative Choices

The shooting angle you choose should be dictated by the structure of the dish, not by what looks cool on Pinterest.

Tall, layered subjects like burgers, cakes, or sandwiches need a low angle, somewhere between 0 and 30 degrees, so the layers are visible. Shooting those flat-lay from directly above collapses the height and hides the thing you’re actually selling. Flat subjects like pizzas, grain bowls, or charcuterie boards work at 90 degrees overhead because there’s no height to lose and the arrangement carries the visual interest.

The most common mistake I see is shooting every single dish at the same 45-degree angle because it “feels balanced.” That angle is actually the hardest to use well. It shows some height and some layout but rarely maximizes either. Be decisive. Commit to overhead or commit to low. Mixed-angle galleries on a restaurant or catering website feel inconsistent and undermine the brand credibility you’re trying to build.

The Time I Got This Wrong on a Real Job

Early in my career, I shot a full menu for a client in a rush. I kept my lighting consistent throughout the shoot but didn’t adjust my shooting angle between the flatbreads and the stacked sliders. The flatbreads looked great. The sliders looked like pancakes. Same light, same settings, same background. The angle was the only variable, and it cost me two hours of reshoots.

I’ve shot roughly 200 products in a single day using tight, repeatable setups, and the thing that lets you move that fast is not speed. It’s having a decision framework so you’re not thinking from scratch each time. For food, that framework starts with one question: is the height of this dish part of what I’m selling? If yes, go low. If no, go overhead. Everything else follows from that.

File Output and Delivery for Food Menus and E-Commerce

Export food photography at sRGB for any web use. Shoot RAW, always, but deliver JPEG at around 80 percent quality in Lightroom’s export panel. That keeps file sizes under 500KB for most hero images, which matters for page load speed on e-commerce and restaurant sites. If a client needs images for print, export as a 16-bit TIFF at 300 DPI and let them handle the conversion.

The single most important thing you can do for your food photography is stop treating light direction as an aesthetic preference and start treating it as structural information. Get your key light off the camera axis, use a bounce card to control your shadows, and let the dish tell you which angle shows it best.
