The Mistake I See in Every Food Brand’s Product Page

I photographed my lunch again before eating it. My partner has stopped commenting on this. The thing is, I notice something every time I set up that shot on my kitchen counter: most people who photograph food for their shops or menus are killing the depth of their image before they even pick up the camera.

The single most common mistake I see in food product photography, from sauce brands to bakeries to meal kit companies, is flat front lighting. Someone points a ring light or an overhead softbox directly at the food, and the result looks like a cafeteria menu photo. The colors are technically accurate. The food looks completely unappetizing.

Understanding why that happens is what separates a product photographer from someone who just owns a camera.

What “Flat” Actually Means in Camera Physics Terms

Light creates texture by casting shadows. When your light source hits your subject from almost the same angle as your lens, those shadows fall directly behind the food, out of frame. You eliminate the very visual information your viewer’s brain uses to interpret shape, height, and surface quality. A croissant looks like a brown oval. A bowl of soup looks like a painted circle.

The technical term for this is axial lighting, and it’s exactly right for certain product categories, like jewelry or glassware where you want zero distraction. For food, it’s a disaster. Food gets its appetite appeal from what photographers call specular highlights and diffused shadow gradients. The glistening edge of a strawberry, the slight shadow tucking under a burger bun, the matte dustiness on a chocolate truffle. These are all shadow and reflection relationships. Kill the shadow angle and you kill the story.

The fix is backlighting or a strong side key light, not because it looks artistic, but because it’s the geometrically correct way to reveal three-dimensional texture on an object with an irregular surface.

The Lighting Ratio That Works for 90% of Food Setups

My go-to setup for food product work is a 3:1 ratio with a single key light at roughly 45 degrees behind the subject, angled down at about 30 degrees from horizontal, and a white foam core reflector on the opposite side about 18 inches from the plate. That’s it. No second light, no complicated equipment.

In practical terms: if I’m shooting with a strobe, my key light is at 200 watt-seconds and my reflector fills the shadow side with roughly 60 to 70 watt-seconds of bounced light. That ratio keeps shadow detail visible while preserving enough contrast to make the food read as dimensional.

For brands shooting on a budget with natural light, position your setup within two feet of a north-facing window (north-facing in the Northern Hemisphere means consistent, indirect light without hard sun movement). Place your food so the window is behind and slightly to the side of the dish. Put your foam core on the near side. Shoot between 10 a.m. and 2 p.m. when outdoor light levels are high enough to keep your ISO below 400, which is where color noise starts destroying the fine texture detail you worked to create.

Camera settings I use as a baseline: f/5.6 for a sharp product with slight background blur, 1/125 shutter to eliminate motion blur from any steam or liquid movement, ISO 100 to 200 when using strobes.

The Props and Surface Choices That Do the Lighting Work for You

Surfaces are part of your lighting system. A matte linen or slate surface absorbs and scatters light, which gives food a natural, handmade quality. A glossy white surface bounces light back into your shadows for free. A dark wood surface increases your effective contrast ratio without you touching a single modifier.

I keep four surfaces in rotation: a 24x24 inch piece of white marble contact paper on foam board (cost: $12 at any hardware store), a dark walnut peel-and-stick vinyl sheet, a gray linen fabric remnant, and a worn cutting board I found at a thrift shop. These four surfaces cover probably 85% of the food product categories I shoot, from specialty coffee to artisan cheese to hot sauce.

Props follow the same rule: they work with light or against it. Matte ceramics are almost always safe. High-gloss cutlery will create hot spots that pull the viewer’s eye away from the product. When in doubt, choose props with matte or satin finishes and neutral or earth-toned colors. This is not an aesthetic preference. It’s about keeping the light on the food.

The Test I Run Before Every Food Shoot

I have a lightbox in my kitchen that I originally built for testing e-commerce setups with small objects. I started running food through it a few years ago just to check how different surfaces and backlight angles read on camera before committing to a full setup. It takes me about ten minutes to shoot three or four variations of a lighting configuration and review them at 100 percent zoom on my laptop.

This habit started after I helped a friend relaunch her small-batch hot sauce line. She had been photographing bottles on her kitchen counter with her phone’s auto-HDR on, which was doing exactly the wrong thing: artificially boosting shadow recovery and making the sauce inside the bottles look dull and uniform instead of showing the actual color variation and viscosity that made her product interesting. We spent two hours doing test shots, identified a backlit angle with a piece of white foam core as fill, and her product images went from looking like something at a gas station checkout to something you’d see in a specialty grocery store.

She told me later that her conversion rate on her website nearly doubled after the relaunch. That kind of result is not about talent or expensive gear. It is entirely about understanding where the light is going and what it is doing to the surface of your subject.

The most important thing I can tell you about food photography is this: stop lighting the food and start lighting the texture. The camera will record whatever you show it, and texture only exists in photographs because of the angle between your light and your lens.
