Why Your Food Looks Flat in Photos (And the Lighting Fix That Costs Nothing)
I photograph my dinner before I eat it. Every night. My roommates have given up asking why. But that habit, which started as an occupational reflex, has taught me more about food photography than any formal course I’ve taken, because food is one of the most unforgiving subjects a product photographer can shoot.
A piece of jewelry will sit still. A candle won’t sweat. Food is alive, it’s steaming or melting or wilting, and the window of time between “this looks incredible” and “this looks like a crime scene” is measured in minutes. If you sell food products online, whether that’s artisan hot sauce, packaged cookies, or meal kits, your customers are making a buying decision based entirely on how that food looks in a still image. That image needs to do a lot of heavy lifting.
Why Food Photography Is Actually a Physics Problem
The reason most food photos look flat comes down to how light reveals texture, and texture is what makes food look edible. A matte, diffused light source spread evenly across a dish removes all the micro-shadows that tell your brain a brownie is fudgy or a cracker is crispy. You end up with technically correct exposure and an image that looks like a school cafeteria menu from 2003.
Food needs what photographers call “raking light,” a light source positioned low and to one side, typically at a 30 to 45 degree angle from the surface of the food. This angle skims light across the surface rather than pouring it straight down, and it catches every ridge, crumb, and glaze in a way that overhead or front lighting simply cannot. It’s the same principle behind how photographers light coins and jewelry to show engraving detail. The physics are identical. The only difference is your subject is delicious.
The Setup I Use in My Kitchen Every Single Day
I have a small lightbox on my kitchen counter that I originally built for testing product setups. It cost me about $22 in materials from a craft store, foam board and a utility knife and some daylight-balanced LED strip lights rated at 5600K. I use it constantly for food tests because it lets me isolate one variable at a time.
For actual food product photography, though, I move to a window setup. North-facing natural light is ideal because it’s consistent and cool-toned, but any window without direct sunlight hitting the surface will work. I place the dish about two feet from the window, with the light source hitting from the left at roughly a 45 degree angle. On the right side, opposite the window, I position a foam board reflector to bounce light back and fill the shadows. That’s the entire setup. No flash, no softbox, no expensive equipment.
For camera settings, I shoot in manual mode with an ISO of 100 to 200 to keep the image clean, an aperture between f/2.8 and f/4 for a shallow depth of field that focuses attention on the hero element, and a shutter speed adjusted to properly expose for the ambient light, usually somewhere between 1/60 and 1/200. I always shoot in RAW, not JPEG. A JPEG throws away data the moment it’s captured, and with food, which sits in a narrow color range of reds, oranges, and browns, you want that latitude in post when you’re pulling details out of shadows or cooling down a too-warm white balance.
The Color Temperature Mistake That Ruins Most Food Shots
Artificial kitchen lighting is almost always tungsten or warm LED, in the 2700K to 3200K range. This makes everything look yellow-orange. If you’re photographing a golden shortbread cookie under warm kitchen lights, the image will look dingy because there’s no visual contrast, the warm subject and the warm light source blend together and the cookie loses all definition.
Set your camera’s white balance to match your light source, and then consider whether that rendering actually serves the food. Cooler light (5000K to 6500K) tends to make greens and blues pop and gives food a fresh, clean look. Warmer light flatters roasted and baked goods. I usually shoot at a neutral 5500K and then nudge the white balance in Lightroom during editing, pulling slightly cool for salads and produce, slightly warm for baked items and anything with caramel or chocolate.
What Happened When I Shot My Friend’s Hot Sauce Label
A friend of mine makes small-batch hot sauce that she sells at farmer’s markets and through her website. Her product photography was all shot on her kitchen counter under overhead fluorescent lights, and it showed. The bottles looked flat, the labels were barely readable, and the product had no visual story around it.
I spent one afternoon with her at my place. We used my window, two foam boards, a bottle of her sauce, and a small pile of dried chiles I picked up at a grocery store for $3 as props. We shot about 40 frames. She updated her website photos that week, and her online orders for the following month were more than double what she had seen in the previous three months combined. Same product. Same price point. Better light.
Getting the Angle Right Before You Touch the Camera
Before you adjust a single setting, walk around your subject. Shoot from directly above at 90 degrees, also called flat lay. Shoot from eye level. Shoot from 45 degrees. These three angles will behave completely differently depending on your subject. A bowl of soup almost always looks best from a 45 degree angle because you can see into it. A layered cake needs to be shot at eye level so the layers read. A charcuterie board or a styled table spread is built for flat lay because the arrangement is the composition.
The angle is not an aesthetic preference. It’s a choice about what information you want to communicate to the viewer, and getting it wrong means your lighting work is wasted.
Light your food like you’re revealing its texture, not just recording its color. That single shift in intent will change every image you make.
